Job summary

Meliá Hotels International in Dubai seeks a Commis I - Pastry to join our pastry and bakery team. You will prepare and bake breads, viennoiserie, and support pastry production for restaurants, banquets, and in-room dining.

Ideal candidates have 1+ year experience in pastry or bakery, knowledge of doughs, fermentation, lamination, and familiarity with ovens and mixers. A High School Diploma or culinary certificate is required; food safety certification is a plus.

Qualifications

• 1+ year of experience as a Baker or Commis in a pastry/bakery role, preferably in luxury hospitality.
• Strong knowledge of bread and viennoiserie production, including doughs, fermentation, proofing and lamination.
• Familiarity with bakery equipment such as deck and convection ovens, mixers, sheeters and proofers.
• Good understanding of food safety, hygiene and HACCP standards.
• Ability to work under pressure with speed and accuracy, and a team player attitude.
• English language skills; additional languages are a plus.

Responsibilities

• Prepare and bake a variety of breads, rolls, croissants, Danish pastries, brioche and other viennoiserie.
• Prepare doughs and starters, manage mixing, fermentation, proofing, laminating, shaping and baking.
• Estimate daily production needs and plan baking schedules to ensure freshness for service.
• Support pastry and dessert production and assist Jr Sous Pastry Chef as needed.
• Check quality of ingredients and finished products, report variances.
• Maintain knowledge of bakery menu items, recipes and presentation standards.
