Job summary

CarniStore is seeking an experienced Production & Quality Coordinator to connect our meat processing and kitchen operations with inventory and procurement. You will plan daily production, manage manufacturing orders in our ERP, and ensure accurate yields and traceability from supplier to finished product.

You will lead by example with HACCP knowledge, maintain BOM accuracy, and drive weekly yield and waste reporting. English required, Arabic or Hindi a plus; on-site Dubai work environment.

Qualifications

• 3–5 years of experience in meat processing, hotel central kitchen or food production.
• Hands-on experience with ERP systems such as Odoo Manufacturing or SAP production modules.
• Solid knowledge of meat cuts from carcass to primal to retail, and typical yields.
• Working knowledge of HACCP and food safety standards.

Responsibilities

• Plan daily production from orders and stock levels, and brief the butchers and kitchen team before each shift
• Create, confirm and close manufacturing orders in Odoo MRP, recording actual consumption, output and scrap
• Track yield and trim loss by cut, product and butcher, and flag anything off target the same day
• Keep bills of materials up to date when real yields drift from the standard
• Raise purchase requests to procurement based on stock, forecast and production plans
• Keep batch and lot records accurate for full traceability, from supplier to finished product
• Run regular stock counts with the team and explain any variances
• Send a weekly report on yield, waste, stock variance and production accuracy
