InterContinental Ras Al Khaimah Mina Al Arab Resort & Spa in the United Arab Emirates is seeking a skilled Sushi Chef de Partie to lead sushi preparation and support the Japanese dining program within a luxury resort setting.

You will work under the guidance of the senior culinary team to maintain exceptional quality, presentation and safety standards in a high-volume kitchen and contribute to innovative seasonal dishes.

Qualifikationen

• Previous experience as Sushi Chef de Partie or Demi Chef de Partie – Sushi in a luxury hotel or premium Japanese restaurant.
• Hands-on skills in sushi, sashimi, nigiri, maki, and Japanese cooking techniques.
• Strong knife skills with attention to quality, detail and presentation.
• Good knowledge of HACCP, food safety and kitchen hygiene standards.
• Ability to work efficiently in a busy, high-volume kitchen environment.
• A team player with a positive attitude and willingness to learn and develop.

Aufgaben

• Prepare high-quality sushi, sashimi, nigiri, maki and other Japanese dishes according to established standards.
• Ensure consistency in taste, presentation, portioning and overall food quality.
• Support mise en place, food preparation, production and service within the sushi section.
• Assist with seasonal dishes, menu development and new culinary creations.
• Maintain HACCP, food safety, hygiene and sanitation standards.
• Monitor stock levels, proper storage, food rotation and minimise food waste.
• Support training and development of junior team members within the section.
• Ensure kitchen equipment, tools and work areas are properly maintained and used safely.
• Work closely with the wider culinary team to ensure smooth and efficient service.
• Contribute to a positive, professional and collaborative kitchen environment.
