Job summary

Fundamental Hospitality is preparing La Maison Ani at Mall of the Emirates in Dubai. We are seeking an exceptional Outlet Manager to lead the pre-opening and opening phases, building a high-performing team and delivering outstanding guest experiences from day one.

You will collaborate with senior leadership on readiness, recruitment, training, and the implementation of service and brand standards, then manage day-to-day operations, drive performance, and ensure quality while controlling costs.

Qualifications

• Proven experience as an Outlet Manager in premium or luxury dining.
• Pre-opening experience within a high-end, high-volume restaurant is highly desirable.
• Strong understanding of all-day dining, premium casual dining, and luxury hospitality operations.
• Natural leader able to build, motivate, train, and develop high-performing teams.
• Strong commercial awareness with experience managing budgets, costs, KPIs, and P&L.
• Excellent communication, problem-solving, and organizational skills.
• Hands-on, proactive, and operationally driven with attention to detail.
• Genuine passion for hospitality and delivering warm, intuitive guest experiences.
• Ability to thrive in a fast-paced pre-opening environment and adapt quickly.
• Fluency in English is essential; additional languages are an advantage.

Responsibilities

• Play an active role in the pre-opening process, ensuring the outlet is fully operational for a successful launch.
• Support recruitment, onboarding, training, and development of the opening team.
• Implement and uphold La Maison Ani's operational, service, and brand standards.
• Oversee all day-to-day restaurant operations, ensuring efficiency, consistency, and exceptional execution.
• Lead by example on the floor, creating a visible and inspiring leadership presence for both the team and guests.
• Deliver an outstanding guest experience by anticipating needs, resolving concerns, and consistently exceeding expectations.
• Drive team performance through coaching, training, feedback, and performance management.
• Manage staffing levels, scheduling, and productivity in line with operational requirements and business needs.
• Monitor financial and operational performance, including revenue, costs, budgets, and KPIs.
• Implement effective cost-control measures while maintaining the highest standards of quality and service.
• Ensure full compliance with health, safety, hygiene, and regulatory requirements.
• Analyze guest feedback and operational reports to identify opportunities for continuous improvement.
• Work closely with senior leadership on business initiatives, promotions, strategies, and revenue-driving opportunities.
• Foster a positive, collaborative, high-performance culture aligned with Fundamental Hospitality values and standards.
