Confidential in Dubai is seeking an experienced Bar Lead to craft Rooh-inspired cocktails and oversee the beverage program in a luxury dining setting. You will manage mise en place, infusions, batched drinks, and garnishes to ensure consistency across service and seasons.

Lead a small bar team, train staff, and optimize inventory and costs while upholding UAE licensing rules. A strong background in fine dining and a WSET Level 2 is preferred for this role.

Formación

• 48 years of bar experience, including at least 2 years as a senior or lead bartender, ideally in fine dining, premium restaurants or luxury hotels.
• Adept in cocktail preparation from classic technique to modern methods (infusions, batching, etc.).
• Strong understanding of spirits and wines; WSET Level 2 or equivalent preferred.
• POS and inventory management know-how; able to run opening/closing and manage bar independently.
• Familiarity with Indian cuisine and spice profiles is a strong advantage.
• Valid food safety/hygiene certification (or willingness to obtain upon joining).

Responsabilidades

• Prepare and present cocktails to Rooh's recipes with consistent taste, dilution, temperature and garnish.
• Lead cocktail preparation and mise en place, batching, infusions, syrups and garnishes.
• Contribute ideas to seasonal/signature menus reflecting Indian ingredients and Rooh's philosophy.
• Know the full list of spirits, liqueurs, wines, beers and zero-proof with provenance and tasting profiles.
• Keep glassware, tools and equipment clean and in excellent working order.
• Deliver warm, personalised service at the bar and support beverage service on the floor.
• Explain drink ingredients, technique and story with confidence; adapt to guests.
• Recommend wine, cocktail and zero-proof pairings; guide guests through the menu.
• Read the room, handle feedback gracefully, and build rapport with regulars.
• Execute opening and closing protocols; manage cash/float and equipment checks.
• Take charge of the bar in the Restaurant Manager's absence; supervise and mentor staff.
• Onboard and train new team members on recipes, standards, and etiquette.
• Run POS correctly; manage stock counts, FIFO, requisitions and deliveries.
• Control beverage cost via standard recipes and accurate pours; record wastage.
