Key Responsibilities
- Implement the PPM Program and schedule for all kitchen and laundry equipment.
- Follow up local authority maintenance plans for laundry & kitchen equipment.
- Maintain basic knowledge of various brands of kitchen equipment.
- Keep records and coordinate with the hygiene manager to meet HACCP requirements.
- Perform ARC and gas welding.
- Attend to repairs and maintenance of laundry and kitchen equipment – both electric and gas.
- Operate, repair and maintain all cold rooms, fridge units, ice machines, and other refrigerated systems.
- Operate, repair and maintain all ovens, dishwashers, stoves and other electric and gas equipment in the kitchen.
- Provide technical assistance for installation of new or additional kitchen equipment.
- Conduct routine inspections of kitchen and bar areas and log observations.
- Read daily logs of cold rooms and other refrigerated equipment, ensuring proper operation.
- Perform equipment repairs per manufacturer’s recommendations.
- Perform assigned checklists, inspections, testing and log readings.
- Check and replace fused bulbs in the kitchen.
- Check and replace water filters for coffee machines and water systems.
- Perform general and emergency repairs and maintenance to all kitchen equipment.
- Ensure fire and engineering safety features operate at peak efficiency.
- Maintain accurate records of all plant and equipment.
- Review daily logbook, rectify or follow up on unsolved items from previous shifts.
- Complete daily tasks and assignments within a reasonable time frame and to the standards set by the Engineering Department.
- Ensure all maintenance requests are carried out within an acceptable time frame.
- Liaise and supervise kitchen equipment contractors, ensuring appropriate standards are met.
- Assist other engineering associates when required.
- Maintain all tools and equipment in good condition.
- Ensure adequate stock of spare parts and materials.
- Safely operate all plant equipment, ensuring safety of guests and staff.
- Familiarity with HACCP.
