Job summary

Fundamental Hospitality seeks a Junior Sous Chef to bolster the senior culinary team at KIGO in Dubai. This hands-on role demands precision, culinary mastery and a deep respect for authentic Japanese traditions in a refined kitchen.

You will support daily operations, help prepare and plate exquisite Japanese dishes, lead in busy services, manage mise en place, and uphold HACCP and food safety standards while training junior staff.

Qualifications

• Proven experience as Junior Sous Chef or similar senior kitchen role.
• Strong background in authentic Japanese cuisine is essential.
• Experience in omakase, kaiseki, edomae sushi or other traditional Japanese fine dining styles is essential.
• Strong knowledge of Japanese ingredients, techniques, seasonality and presentation.
• Previous experience in high-end Japanese fine dining or luxury hospitality.
• Strong leadership and team management skills.
• Exceptional attention to detail, precision and consistency.
• Ability to work effectively in a demanding, high-volume kitchen.
• Professional, disciplined and hands-on approach.
• Passion for authentic Japanese culinary traditions.
• Currently based in Dubai or willing to relocate.

Responsibilities

• Support the Sous Chef and senior culinary team with the day-to-day kitchen operation.
• Assist with the preparation and execution of Japanese fine dining dishes.
• Maintain consistently high standards of quality, presentation and execution.
• Work closely with the culinary team during busy service periods.
• Support menu preparation, mise en place and daily kitchen organization.
• Ensure recipes, specifications and portion controls are followed accurately.
• Maintain a strong knowledge of Japanese ingredients, techniques, seasonality and presentation.
• Assist with training, supervision and development of junior kitchen team members.
• Monitor food quality, freshness and preparation standards.
• Support stock control, ordering and minimizing food waste.
• Ensure all food safety, hygiene and HACCP standards are maintained.
• Maintain a clean, organized and disciplined kitchen environment.

• Proven experience as a Junior Sous Chef, Chef de Partie or similar senior kitchen role
• Strong professional background in authentic Japanese cuisine is essential
• Experience in Omakase, Kaiseki, Edomae Sushi or other traditional Japanese fine dining styles is essential
• Strong knowledge of Japanese ingredients, techniques, seasonality and presentation
• Previous experience within high‑end Japanese fine dining or luxury hospitality
• Strong leadership and team management skills
