Job summary

Accor's Fairmont Ajman is seeking a motivated Commis to support the kitchen team in preparing high-quality meals for Heartists, ensuring food quality, hygiene, and timely service in a fast-paced, multicultural environment.

You'll assist with breakfast, lunch, and dinner, maintain mise en place, follow HACCP standards, and help with buffet setup while embracing Accor's values and opportunities within the global network.

Qualifications

• Previous experience as a Commis or in a professional kitchen is preferred.
• Experience in a staff cafeteria, hotel, restaurant, or high-volume kitchen is an advantage.
• Basic knowledge of food preparation and cooking techniques.
• Knowledge of food hygiene and HACCP principles.
• Ability to work efficiently in a fast-paced and multicultural environment.
• Good teamwork and communication skills.
• Flexible to work shifts, weekends, and public holidays.

Responsibilities

• Assist in the daily preparation, cooking, and presentation of meals for Heartists in the cafeteria.
• Support the Chef in preparing breakfast, lunch, dinner, and special meals as per the daily menu.
• Prepare ingredients by washing, peeling, cutting, portioning, and storing food items appropriately.
• Ensure food is prepared according to approved recipes, portion sizes, and quality standards.
• Maintain consistency in taste, quality, temperature, and presentation of food.
• Assist with buffet setup, replenishment, and maintaining adequate food levels during meal periods.
• Monitor food quality and freshness and immediately report any concerns to the Chef.
• Follow proper food handling, storage, FIFO, and temperature-control procedures.
• Maintain cleanliness and hygiene of the kitchen, equipment, workstations, and storage areas.
• Ensure all food preparation areas comply with HACCP and hotel food safety standards.
• Minimize food wastage through proper preparation, portion control, and storage.
• Assist with receiving, checking, and storing food supplies when required.
• Maintain a clean and organized mise en place throughout the shift.
• Support other kitchen sections during busy periods as directed by the Chef.
• Follow all hotel policies, procedures, and occupational health and safety standards.
• Contribute to creating a positive Heart of the House dining experience for all Heartists.
