Job summary

Park Hyatt Dubai is seeking a Commis Chef to support the Italian kitchen, helping to prepare and present authentic Italian dishes to exacting standards. You will assist with mise en place, ensure ingredients are ready for service, and maintain high levels of freshness, quality, and hygiene.

You will work closely with the Chef de Partie and senior chefs in a fast-paced luxury environment, developing practical knowledge of Italian ingredients and techniques and contributing to a seamless kitchen

Qualifications

• Diploma or certificate in Culinary Arts, Professional Cookery preferred.
• 1–2 years kitchen experience, preferably with Italian cuisine in luxury hospitality.
• Knowledge of Italian ingredients, recipes, and techniques.
• Experience in mise en place, pasta, sauces, antipasti, vegetables, meat, seafood.
• Good understanding of food safety, HACCP, allergen management, sanitation, and hygiene.
• Motivated, organized, and eager to learn, with ability to follow instructions in a fast-paced team.

Responsibilities

• Assist in preparing and presenting Italian dishes according to approved recipes and standards.
• Complete daily mise en place and ensure ingredients are ready before service.
• Support preparation of pasta, risotto, sauces, antipasti, soups, meat, seafood, and vegetables.
• Follow instructions of the Chef de Partie and senior chefs for smooth operations.
• Maintain consistency in flavour, texture, temperature, portioning, and presentation.
• Check freshness and quality of ingredients and report concerns to senior team.
• Label, date, store, and rotate ingredients and prepared items as required.
• Monitor stock levels and communicate replenishment needs to Chef de Partie.
• Minimize food waste through proper preparation and portioning.
• Coordinate with other kitchen sections to ensure timely delivery.
• Follow procedures for guests with allergies or dietary requests.
• Maintain a clean, organized, and hygienic workstation; comply with safety and hygiene standards.
