The Lana - Dorchester Collection in Dubai is seeking a Head Mixologist to lead and elevate our beverage program across all hotel outlets. You will craft innovative cocktails, set standards, and mentor the bar team to deliver exceptional guest experiences.

Responsibilities

• Ensure beverage standards across all areas meet luxury levels and Dorchester values.
• Train, coach and mentor the bar team to uphold operational excellence.
• Drive quality of beverage program with deep product knowledge for teams and guests.
• Design innovative, seasonally inspired cocktail programs reflecting global mixology trends.
• Collaborate with culinary team for sophisticated food and beverage pairings for events and VIP guests.
• Establish relationships with premium vendors for exclusive spirits and sustainable ingredients.
• Manage inventory control, waste reduction, and portion standards to maximise profitability.
• Oversee health, safety, food hygiene, and liquor licensing regulations across bar operations.
• Ensure bar tools, glassware, and equipment are maintained and operating at peak efficiency.
• Contribute to the quality of beverage offerings and share knowledge with teams and guests.

• Establish relationships with premium vendors to secure exclusive spirits, rare vintages, and high-quality, sustainable local ingredients.
• Manage inventory control, waste reduction, and portion standards to maximize profitability without compromising on luxury quality.
• Oversee strict adherence to health, safety, food hygiene, and local liquor licensing regulations across all bar operations.
• Ensure all specialized bar tools, glassware, and equipment are meticulously maintained and operating at peak efficiency.
• You will play an integral role in the quality of our beverage offerings and will share their knowledge with our teams and guests alike.
