Job summary

SLS Dubai Hotel and Residences is seeking a dynamic Head Chef to lead all daily culinary operations of our restaurant, ensuring exceptional quality, presentation, and consistency in every dish. You will mentor the culinary team, collaborate with the Executive Chef on menu development and seasonal initiatives, and uphold HACCP, budgeting, and sustainable kitchen practices in a luxury, high-volume setting.

Qualifications

• Culinary degree or diploma from a recognized institution; equivalent industry experience may be considered.
• 5–7 years of progressive culinary experience in luxury hotels, upscale restaurants, or premium steakhouse operations; 2–3 years in a senior role.
• Expertise in modern steakhouse cuisine, meat prep, butchery, and diverse cooking techniques.
• Strong leadership, people management, and ability to train and develop a diverse team.
• Knowledge of menu costing, food cost control, and kitchen profitability.
• English proficiency; additional languages advantageous.

Responsibilities

• Lead and oversee daily culinary operations of the restaurant.
• Maintain high standards of food quality, taste, presentation, and portion control.
• Ensure dishes follow approved recipes and restaurant standards.
• Supervise, train, and develop the culinary team.
• Plan mise en place, production, service, and kitchen workflow.
• Collaborate with Executive Chef on menu development and initiatives.
• Maintain steakhouse concept and culinary identity in all dishes.
• Monitor meat preparation, butchery, and product utilization.
• Promote sustainable kitchen practices and minimize waste.
• Monitor food costs, yields, and wastage; coordinate with Purchasing.
• Ensure proper receiving, storage, labeling, and handling per HACCP.
• Ensure kitchen cleanliness, hygiene, and safety compliance.
• Support banquet, VIP, and special dining needs.
• Maintain culinary records and temperature logs.
• Handle guest feedback professionally and take corrective action.
• Comply with hotel policies and brand standards.
