Job summary

Accor in Dubai is seeking an experienced Chef de Partie (Cold Kitchen) to lead the garde manger station at Novotel Dubai Al Barsha. You will oversee cold kitchen operations, mentor staff, and ensure exceptional cold dishes, salads and charcuterie.

The role focuses on quality, presentation, food safety, and collaboration with the kitchen team to deliver consistent, high‑end service in a fast‑paced, multi‑cultural environment.

Qualifications

• 3–5 years in a professional cold kitchen with 2+ years in a lead role
• Advanced knowledge of cold prep incl. charcuterie, pâtés and terrines
• Excellent knife skills and proficiency with kitchen tools
• Strong understanding of food safety, sanitation and HACCP principles
• Ability to work under pressure while maintaining high quality and attention to detail
• Experience with food costing, budgeting, and inventory management systems
• Leadership and mentoring abilities with excellent communication
• Ability to adapt to changing priorities in a fast-paced, multicultural kitchen

Responsibilities

• Lead and supervise the cold kitchen station ensuring efficient workflow during service
• Develop and refine cold kitchen menus and seasonal specials
• Prepare and present cold dishes, salads, charcuterie, and garde manger items
• Mentor and train junior staff, providing constructive feedback
• Maintain organization and stock of the cold kitchen and tools
• Monitor quality, temperature and freshness; take corrective actions as needed
• Collaborate with chefs to ensure seamless service delivery
• Receive, inspect and store ingredients; manage supplier communications and stock
