InterContinental Residences Abu Dhabi, part of IHG Hotels & Resorts, is seeking a confident F&B Captain to oversee daily service in our Mediterranean brasserie. Lead the dining team, welcome guests, coordinate reservations, and ensure flawless service in a refined setting.

You'll maintain menu knowledge, guide staff, monitor guest satisfaction, and work closely with kitchen and bar to deliver memorable experiences while upholding hygiene and service standards across shifts.

Qualifications

• Previous experience as F&B Captain or in a supervisory role in luxury/hospitality environments.
• Strong knowledge of restaurant operations, food & beverage service and guest relations.
• Good understanding of Mediterranean cuisine and ability to explain menu items.

Responsibilities

• Supervise daily restaurant service ensuring smooth operations and adherence to standards.
• Lead and support F&B Attendants, allocating duties and guiding service.
• Welcome guests professionally and provide a warm, personalized dining experience.
• Coordinate table allocation, reservations, and service flow for efficient seating and timely service.
• Ensure accurate, prompt service of food and beverages with high presentation standards.

• Conduct pre-service briefings to communicate specials, VIP arrivals, and priorities.

• Monitor availability of service equipment, tableware, and supplies.
• Ensure compliance with food safety, hygiene, and health & safety procedures.

The successful candidate will play a key role in overseeing daily service, guiding the restaurant team, and ensuring every guest enjoys a seamless and memorable dining experience. A little taste of your day-to-day:

Every day is different, but you will mainly be responsible for:

• Supervise daily restaurant service, ensuring smooth operations and adherence to established service standards.
• Lead and support F&B Attendants, ensuring duties are allocated effectively and service expectations are consistently met.
• Welcome guests professionally and ensure a warm, attentive, and personalised dining experience.
• Coordinate table allocation, reservations, and service flow to ensure efficient guest seating and timely service.
• Ensure food and beverages are served accurately, promptly, and in accordance with presentation and quality standards.
• Maintain strong knowledge of the menu, including Mediterranean dishes, ingredients, preparation methods, and beverage selections.
• Provide menu recommendations and assist guests with dietary requirements, allergies, and special requests.
• Monitor guest satisfaction throughout service, addressing feedback and resolving concerns promptly and professionally.
• Conduct pre-service briefings to communicate daily specials, promotions, VIP arrivals, guest preferences, and operational priorities.
• Coordinate closely with the kitchen, bar, and other departments to ensure effective communication and seamless service delivery.
• Ensure tables, service stations, and restaurant areas remain clean, organised, and properly equipped throughout the shift.
• Monitor the availability of service equipment, tableware, glassware, and other operational supplies.
• Ensure compliance with food safety, hygiene, sanitation, and health and safety procedures.
• Support upselling initiatives and promote food and beverage offerings to enhance the guest experience and contribute to revenue targets.
• Assist with staff training, coaching, and on-the-job development to maintain consistent service quality.
• Monitor team performance during service and provide guidance to ensure operational efficiency.
• Assist with opening and closing procedures, cash handling, billing accuracy, and completion of relevant shift reports where required.
• Maintain professional grooming, discipline, and a positive team environment in line with hotel standards.

What we need from you:

• Previous experience in a similar F&B Captain, Senior F&B Attendant, or supervisory role, preferably within a luxury hotel or upscale restaurant.
• Strong knowledge of restaurant operations, food and beverage service, and guest relations.
• Good understanding of Mediterranean cuisine and the ability to confidently explain menu items is an advantage.
• Proven ability to guide, motivate, and support a team during busy service periods.
• Excellent communication, interpersonal, and problem-solving skills.
• Strong organisational abilities and attention to detail.
• A genuine passion for hospitality and delivering personalised guest experiences.
• Good knowledge of food safety, hygiene, and service standards.
• Ability to remain composed under pressure and manage multiple priorities effectively.
• Proficiency in English; additional languages are an advantage.
• Professional grooming, a positive attitude, and a strong sense of responsibility.
• Flexibility to work rotational shifts, including weekends and public holidays.
