Job summary

Universal Group in Dubai is seeking a Demi Chef de Partie with a strong Thai cuisine background to join a luxury hotel kitchen.

You will prepare, cook and present dishes to the highest standards, maintain HACCP compliance, assist with menu planning and stock controls, and coach junior staff under supervision.

Requires at least 2 years in a 5-star hotel and a genuine passion for leadership and quality presentation.

Qualifications

• At least 2 years of Demi Chef de Partie or Commis I experience in a 5-star hotel.
• Strong working knowledge of Thai cuisine.
• Strong understanding of HACCP and high hygiene standards.
• Demonstrates leadership and interest in menu planning.

Responsibilities

• Prepares, cooks and serves food to the highest quality and presentation standards.
• Prepares appetizers plus meat and vegetables for entrees and assists with proper presentation.
• Maintains HACCP, labeling and dating, cleaning schedules and hygiene records.
• Assists with acceptance and storage of deliveries and related procedures.
• Maintains a clean, hygienic and tidy work area.
• Understands and supports menu planning and stock controls to meet gross profit targets.
• Follows opening/closing kitchen procedures and rotates as required.
• Implements cost-saving measures for electricity and supplies in kitchen operations.
• Reports for duty on time and to supervisor/manager on duty.
• Maintains grooming standards in all areas of the kitchen and public eye.
• Reports incidents, guest complaints, losses, breakages to superiors.
• Trains and counsels junior kitchen staff and conducts on-the-job training.
• Supports cross-department cooperation and team success for the hotel.
• Attends pre-meal briefings, daily briefings, and staff meetings.
