Job summary

Rotana Ras Al Khaimah - The Mangroves seeks an energetic Demi Chef de Partie to support daily kitchen operations, follow menu specifications, and maintain hygienic work areas within a busy hotel environment.

You will control stock and assist in mis-en-place across main and satellite kitchens, guiding juniors and collaborating with other sections to optimise costs and quality for guests in a multicultural setting.

Qualifications

• You should have a professional kitchen apprenticeship or chefs training course and previous experience in quality establishments along with good culinary skills.
• The ability to communicate well in English and a proven track of food preparation, presentation and preservation knowledge is essential.

Responsibilities

• Support the Chef de Partie or Sous Chef in the daily operation and work.
• Work according to the menu specifications by the Chef de Partie.
• Keep work area at all times in hygienic conditions according to the rules set by the hotel.
• Control food stock and food cost in the section.
• Prepare the daily mis-en-place and food production in different sections of the main kitchen or satellites.
• Follow the instructions and recommendations from the immediate superiors to complete the daily tasks.
• Ensure the highest standards and consistent quality in daily preparation and keep up to date with new products, recipes and preparation techniques.
• Instruct and lead subordinates through their daily requirements in food preparation and actively take part in set up of buffets and special functions.
• Coordinate and participate with other sections on requirements, cleanliness, wastage and cost control
