Job summary

Caravan by Our Habitas Hatta in the UAE is seeking a skilled Butcher (Demi Chef de Partie) to join a vibrant culinary team, delivering high-quality meat, poultry and seafood preparation in a luxury adventure camp setting.

You will work closely with the Chef de Partie to uphold food safety, portion control, waste reduction and sustainable sourcing while contributing to a collaborative kitchen culture inspired by Our Habitas.

Qualifications

• Previous experience as a butcher or Demi Chef de Partie in professional kitchens.
• Strong meat, poultry and seafood prep, trimming and portioning skills.
• Knowledge of HACCP, food hygiene, temp control and cross-contamination prevention.
• Cost awareness with waste reduction and portion control.
• Organised, attentive to quality and clean working practices.
• Team player who collaborates across kitchen sections.
• English language proficiency.
• Passion for craftsmanship, sustainability and experiential hospitality.
• Alignment with Our Habitas philosophy.

Responsibilities

• Prepare, trim, cut, debone and portion meat, poultry and seafood.
• Ensure products meet quality, freshness, and presentation standards.
• Support daily mise en place and production across the kitchen.
• Receive and inspect meat deliveries for quality and temperature.
• Store products correctly under HACCP and FIFO guidelines.
• Maintain accurate portion control to support food costs.
• Minimise waste through proper storage and utilisation.
• Maintain cleanliness and sanitation in the butchery area.
• Follow HACCP and occupational health & safety requirements.
• Coordinate with Chef de Partie and Sous Chef to meet service needs.
