Job summary

DELANO Dubai is seeking a Commis I/II to join its luxury kitchen brigade on the Bluewaters Island project in Dubai. You will support chefs in ingredient prep, mise-en-place, and service execution while upholding DELANO standards of quality and cleanliness.

You should bring a foundation in culinary techniques, attention to detail, and a willingness to learn in a fast-paced, high-end hotel setting. The role offers growth within a prestigious lifestyle brand and collaborative team culture.

Qualifications

• Luxury experience in a high-end hotel or restaurant is preferred.
• Basic understanding of culinary techniques and kitchen operations.
• Strong focus on accuracy, cleanliness, and presentation standards.
• Understanding of basic food safety and HACCP principles.

Responsibilities

• Assist in preparation of ingredients and dishes according to recipes and brand standards.
• Ensure station is fully set, organised, and ready for service.
• Support senior chefs during service and complete tasks under guidance.
• Maintain consistency in food preparation, presentation, and portioning per DELANO standards.
• Follow HACCP, hygiene, and safety procedures; keep workstation clean and compliant.
• Assist with proper storage, labeling, and rotation of ingredients to reduce waste.
• Collaborate with Demi Chef de Partie and Chef de Partie for smooth operations.
• Actively learn and develop culinary techniques under senior guidance.
• Maintain professionalism, punctuality, and a positive attitude in a fast-paced kitchen.
• Assist with general kitchen duties to ensure efficiency across service periods.

• Food Preparation Support: Assist in the preparation of ingredients and dishes according to recipes and brand standards
• Mise-en-Place: Ensure your station is fully set, organised, and ready for efficient service execution
• Service Assistance: Support senior chefs during service by completing tasks accurately and promptly under guidance
• Quality Standards: Maintain consistency in food preparation, presentation, and portioning in line with DELANO standards
• Hygiene & Safety: Follow strict HACCP, hygiene, and food safety procedures, ensuring a clean and compliant workstation
• Stock Handling: Assist with proper storage, labelling, and rotation of ingredients to maintain freshness and reduce waste
• Team Collaboration: Work closely with Demi Chef de Partie and Chef de Partie to ensure smooth kitchen operations
• Skill Development: Actively learn and develop culinary techniques under the supervision of senior kitchen team members
• Kitchen Discipline: Maintain professionalism, punctuality, and a positive attitude in a fast-paced environment
• Operational Support: Assist with general kitchen duties to ensure efficiency and consistency across service periods

Qualifications:

• Luxury Experience: Previous experience as a Commis I or Commis II in a luxury hotel, high-end restaurant, or similar environment preferred
• Culinary Foundation: Basic understanding of culinary techniques, food preparation, and kitchen operations
• Attention to Detail: Strong focus on accuracy, cleanliness, and presentation standards
• Hygiene Knowledge: Understanding of basic food safety and HACCP principles
• Team Player: Willingness to learn and work collaboratively within a structured kitchen brigade
• Adaptability: Able to perform in a fast-paced, high-pressure kitchen environment
• Educational Background: A formal culinary qualification or international culinary training is preferred, with strong technical foundations.
