Emirates Flight Catering in the UAE seeks a Production Supervisor to oversee daily bulk production in a high-volume Cold Kitchen. You will manage production planning, roster coordination, batch control, and timely dispatch to match daily demand and forecasts.

You will ensure HACCP and food safety compliance, proper portioning and presentation, and strict hygiene while driving SOP adherence and staff development.

Qualifications

• Hotel Management or Culinary degree.
• Minimum of 5 years experience in the culinary field.
• Hotel Catering equivalent in 5-star facility with excellent knowledge of cooking and cuisines.
• Experience in high volume and/or banqueting in a large kitchen team preferred.

Responsabilités

• Supervise and allocate work to subordinates and coordinate with senior staff to provide training for smooth workflow and target output.
• Ensure output delivery through roster planning/scheduling.
• Ensure timely production per specifications, portioning, airline standards, and food-safety recording with daily monitoring.
• Identify and resolve operational issues by implementing corrective actions and communicating with senior chefs.
• Drive SOP adherence and update, addressing non-conformances and ensuring compliance with recipes and methods.
• Support development of new recipes and menu items by coordinating with stakeholders and guiding the team.
• Prepare and execute the production plan to meet targets and maintain production sheets for all airlines/catering lines.
• Maintain stock rotation, on-time deliveries, and hygiene procedures.
• Implement food cost and wastage control by monitoring portions and variances against plans.
• Comply with Safety & Hygiene Policy and Procedures.
