Job summary

PaardenKloof Estate in Bot River, Walker Bay, is seeking an experienced Winemaker to lead all harvest activities and to manage the complete winemaking process from grape to bottle. The role includes supervising viticultural practices, ensuring exceptional wine quality, and overseeing blending, maturation and regulatory compliance.

You will maintain production records, manage inventory and staff development, support tastings and promotional activities, and contribute to key contracts.

Qualifications

• Degree or Diploma in Viticulture and Oenology required.
• Minimum 2 years in a similar Winemaker role or 4 years as Assistant Winemaker.
• Proven practical experience in a commercial winery and good terroir knowledge.
• Excellent interpersonal skills and ability to work in a team and individually.

Responsibilities

• Lead and coordinate all harvest activities.
• Manage winemaking from grape to bottle and oversee blending.
• Supervise viticultural practices and maintain wine quality.
• Oversee regulatory compliance, SAWIS admin, and production records.
• Coach cellar staff and assist recruitment and onboarding.
