Qualifications

• 3–5+ years of experience in quality restaurant kitchens.
• Experience in fire cooking, butchery, fermentation, preservation, bread, seasonal produce or modern South African cooking is advantageous.
• Strong leadership and ability to develop others without ego.

Responsibilities

• Lead and organise sections during service
• Maintain high standards of cooking, presentation and consistency
• Work across restaurant, casual dining and central production kitchens
• Support and develop junior chefs
• Assist with menu development, recipe costing and seasonal changes
• Contribute to ordering, stock control, food cost and waste management
• Take a senior role during busy services, events and periods of leave
