Job summary

wine.co.za, Stellenbosch, seeks an experienced Assistant Winemaker to support the Winemaker in all aspects of wine production, cellar operations and related administration. The role emphasizes high-quality production, strict compliance and documenting processes.

You will work closely with the Winemaker, oversee harvest logistics, and help coordinate cellar activities, ensuring premium wines are produced in line with the estate's philosophy and standards.

Qualifications

• 2+ years practical winemaking experience in a commercial winery environment.
• Knowledge of SAWIS, IPW and other industry regulations.
• Sound understanding of quality-control systems and procedures.
• Experience in wine-production administration and recordkeeping.

Responsibilities

• Assist with harvest planning, scheduling and coordination.
• Support all cellar operations during winemaking, including monitoring fermentations and movements.
• Aid with blending, stabilisation, bottling and related wine treatments.
• Maintain accurate production records and ensure equipment is operated safely and efficiently.
• Coordinate procurement of cellar consumables and manage stock levels.
• Assist with training and development of cellar staff and supervise cellar team.

Skills

Two years' winemaking experience

Knowledge of SAWIS & IPW

Recordkeeping & administration

Driver's license

Education

Tertiary qualification in Viticulture & Oenology or equivalent
