Job summary

UpMan Placements in South Africa is seeking an experienced Dairy QA Specialist to lead production quality on UHT, pasteurized milk and aseptic filling operations. You will conduct audits, monitor processes, and drive improvements in line with PRP, GMP, GHP, CCP and OPRP standards.

The ideal candidate has a Bachelor's in Dairy Technology, Food Technology, or Microbiology, 8+ years in dairy production and QA, and strong knowledge of process instrumentation and GMP requirements.

Responsibilities

• Conduct production line audits for PRP, GMP, GHP, CCP and OPRP compliance.
• Monitor dairy processing including UHT, pasteurization, homogenization, and aseptic filling.
• Coordinate with maintenance for preventive maintenance, calibration and reliability.
• Investigate quality issues with RCA and implement CAPA.
• Review cleaning validation and hygiene tests (CIP/COP, ATP).
• Analyze downtime and waste to improve efficiency.
• Review SOPs/SSOPs and work instructions related to hygiene.
• Train operators on food safety and documentation.
• Support yield optimization and first-pass production efficiency.

Role & responsibilities

• Conduct production line audits to ensure compliance with PRP, GMP, GHP, CCP, and OPRP standards.
• Monitor dairy processing and filling operations, including UHT, pasteurization, homogenization, and aseptic filling.
• Coordinate with maintenance teams for preventive maintenance, equipment calibration, and reliability.
• Investigate recurring quality issues using Root Cause Analysis (RCA) and implement CAPA.
• Review CIP/COP cleaning validation and hygiene effectiveness through ATP swab testing and inspections.
• Analyze equipment downtime, product rework, packaging defects, and production losses to improve efficiency.
• Ensure accurate CCP/OPRP monitoring, documentation, and timely escalation of deviations.
• Review and update SOPs, SSOPs, and work instructions related to hygiene, sampling, and production.
• Train production operators and technicians on food safety, hygiene, quality standards, and documentation.
• Support yield optimization, process improvement, waste reduction, and first-pass production efficiency

Preferred candidate profile

• Bachelors degree in Dairy Technology, Food Technology, or Microbiology.
• Minimum 8+ years of hands-on experience in dairy production and QA roles within UHT, pasteurized milk, flavored milk, or aseptic filling operations.
• Technical knowledge of process control instrumentation (flow meters, temperature sensors, pressure gauges, etc.).
• Working knowledge of FSSC 22000, HACCP, PRPs, and GMP requirements with ability to interpret
