Responsibilities

• Maintain kitchen hygiene and food safety standards.
• Train and mentor chefs; implement kitchen standards.
• Oversee food orders, stock control, storerooms and refrigeration.
• Maintain strict food costs and minimise wastage.
• Ensure all food meets exceptional quality standards.
• Create bush banqueting, picnics, drink stops and game-drive snacks.
• Manage dietary requirements and communicate guest needs to kitchen.
• Promote teamwork, discipline, creativity and professional standards.
• Work with Lodge Management, HODs, chefs, butlers and suppliers.
• Assist with kitchen operations across the property when required.
• Ensure clear communication regarding menus and ingredients.

A prestigious luxury safari lodge in the Hluhluwe area is looking for an experienced and passionate Sous Chefto join its culinary team.

KEY RESPONSIBILITIES

• Maintain exceptional kitchen hygiene and food safety standards
• Train and mentor chefs while implementing kitchen standards
• Oversee food orders, stock control, storerooms and refrigeration
• Maintain strict food costs and minimise wastage
• Ensure all food served to guests meets exceptional quality standards
• Create memorable bush banqueting, picnics, drink stops and game-drive snacks
• Manage special dietary requirements and ensure guest needs are communicated to the kitchen team
• Promote teamwork, discipline, creativity and professional standards
• Work closely with Lodge Management, HODs, chefs, butlers and suppliers
• Assist with kitchen operations across the property when required
• Ensure excellent communication regarding menus, dishes and ingredients

Requirements
