Placements24 is seeking a Head Chef for a renowned fine dining restaurant in East London, Eastern Cape. You will lead all kitchen operations, develop innovative menus, and maintain top-quality food presentation and service.

The role requires a formal culinary qualification and at least 6 years of progressive kitchen experience, including 3 years in a Head Chef or Executive Sous Chef capacity. Strong leadership and HACCP compliance are essential.

Qualifications

• Formal culinary qualification from a reputable institution.
• Minimum of 6 years of progressive experience as a Chef, with at least 3 years in a Head Chef or Executive Sous Chef role in a fine dining or high-quality restaurant.
• Demonstrated creativity and passion for food and innovative cuisine.
• Strong leadership, communication, and team management abilities.
• Excellent understanding of kitchen operations, including costing, inventory, and procurement.
• Proficiency in food safety and sanitation regulations.

Responsibilities

• Lead and manage all kitchen operations, ensuring consistency and high quality in all dishes prepared.
• Develop innovative and seasonal menus that reflect current culinary trends and the restaurant's identity.
• Oversee food preparation, cooking, and presentation standards across all menu items.
• Manage and mentor the kitchen brigade, fostering a positive, productive, and safe work environment.
• Control food costs, manage inventory, and ensure efficient procurement of high-quality ingredients.
• Maintain strict standards of hygiene, sanitation, and food safety in the kitchen, adhering to HACCP principles.
• Collaborate with the management team on menu engineering, promotions, and overall restaurant strategy.
• Ensure all kitchen equipment is well-maintained and operational.
• Conduct regular performance reviews and provide ongoing training and development for kitchen staff.
