Job summary

Bright Placements is seeking a Breakfast Chef to lead high-quality breakfast preparation in a hotel, lodge, or resort kitchen in South Africa. You will manage mise en place, eggs to order, and breakfast service while maintaining HACCP compliance and engaging with the wider kitchen team.

We require 2–3 years of breakfast chef experience, a culinary qualification preferred, and strong organisational skills to thrive in a fast-paced environment with early starts.

Qualifications

  • Matric (Grade 12) is required or preferred.
  • Culinary qualification from a recognised institution is preferred.
  • Food Safety/HACCP certification is desirable.
  • First Aid certification is advantageous.

Job description

The Breakfast Chef is responsible for preparing and presenting high-quality breakfast dishes while ensuring efficient kitchen operations during the breakfast service. The role requires excellent organisational skills, the ability to work efficiently under pressure, and a commitment to maintaining the highest standards of food quality, hygiene, and guest satisfaction. The Breakfast Chef is also responsible for preparing mise en place for breakfast service and supporting the wider kitchen team where required.

Key Responsibilities
Breakfast Service
  • Prepare and cook a wide variety of breakfast dishes, including hot and cold menu items.
  • Ensure all breakfast items are prepared and presented to the highest quality standards.
  • Manage breakfast buffet preparation, replenishment, and presentation where applicable.
  • Prepare eggs to order using a variety of cooking techniques.
  • Ensure timely and efficient service during busy breakfast periods.
  • Cater for special dietary requirements and guest preferences.
Food Preparation
  • Prepare mise en place for breakfast service.
  • Assist with the preparation of baked goods, pastries, fresh fruit, cereals, and continental breakfast items.
  • Support lunch and dinner preparation where operationally required.
  • Ensure consistency in recipes, portion sizes, and presentation.
  • Maintain cleanliness and organisation within the breakfast section.
  • Ensure all kitchen equipment is used correctly and maintained.
  • Monitor stock levels and notify management of ordering requirements.
  • Assist with receiving and storing deliveries according to company procedures.
Food Safety & Hygiene
  • Ensure compliance with HACCP and food safety regulations.
  • Maintain a clean and hygienic workstation at all times.
  • Ensure proper storage, labelling, and rotation of food products using FIFO principles.
  • Follow all health and safety policies and procedures.
Stock Control
  • Minimise food waste through effective planning and portion control.
  • Assist with stock takes and inventory management.
  • Monitor ingredient usage and report shortages promptly.
Teamwork
  • Work closely with the Executive Chef, Sous Chef, and wider kitchen brigade.
  • Assist other kitchen sections during quieter breakfast periods or when required.
  • Support the training of junior chefs and kitchen assistants.
  • Maintain effective communication with Front of House to ensure smooth service.
  • Grade 12 (Matric).
  • Certificate or Diploma in Culinary Arts or Professional Cookery (preferred).
  • Minimum 2–3 years' experience as a Breakfast Chef, Commis Chef, or Chef de Partie in a hotel, lodge, resort, or restaurant.
  • Experience working in high-volume breakfast operations is advantageous.
Qualifications

Technical Skills
  • Strong knowledge of breakfast preparation and cookery techniques.

  • Basic understanding of food costing and portion control.
  • Ability to operate commercial kitchen equipment safely.

  • May be required to assist with lunch preparation or other kitchen duties after breakfast service.
