Game Lodge is seeking a motivated and experienced Assistant F&B Manager to support the smooth running of all food and beverage operations. The role requires a dynamic, guest-focused professional who can assist in managing the F&B team, ensure consistent service standards, and contribute to an exceptional luxury lodge guest experience.
Operational Management
- Assist the F&B Manager in planning, coordinating, and supervising all food and beverage operations.
- Ensure all dining and bar areas maintain the highest standards of service, cleanliness, and presentation.
- Monitor daily service performance and implement improvements as needed.
- Assist in menu planning, food costing, and beverage selection.
Team Leadership
- Supervise and motivate staff, fostering teamwork and a positive work environment.
- Conduct training sessions on service standards, wine knowledge, and guest interaction.
- Assist with staff scheduling, performance management, and daily briefings.
Guest Experience
- Ensure every guest interaction is professional, friendly, and exceeds expectations.
- Handle guest feedback, complaints, or special requests promptly and effectively.
- Support special events, private dining, and boma and bush dinner experiences.
Administration & Compliance
- Assist with stock management, ordering, and inventory control.
- Monitor budgets and help manage costs, wastage, and procurement.
- Ensure compliance with health, safety, and hygiene regulations
Requirements
- Minimum 2–3 years’ experience in F&B management, preferably in luxury lodges, hotels, or resorts.
- Strong understanding of food and beverage operations, wine service, and bar management.
- Excellent leadership and team management skills.
- High attention to detail, organizational skills, and ability to multitask.
- Strong communication and interpersonal skills.
- Ability to work in a remote lodge environment and adapt to seasonal demands.
- Relevant hospitality or management qualifications (desirable but not essential based on prior experience).
