Job summary

Fontainebleau Las Vegas is seeking a Utility Porter to maintain cleanliness and sanitation in kitchen areas and facilities. The role includes trash pickup, equipment cleaning, and assisting with dishwashing in a fast-paced hotel environment.

Qualifications include a High School Diploma and a valid driver’s license, with preferred experience in stewarding and inventory controls. Must be able to work nights, holidays, and weekends as needed.

Responsibilities

• Maintain cleanliness and sanitation of work areas, kitchens, venues, and equipment in accordance with Health Department standards.
• Clean and sanitize kitchen hoods, stoves, grills, ovens, broilers, burners, steamers, kettles, braisers, fryers, dishwashers, and counters.
• Pick up and dispose of trash and cardboard in all kitchens and F&B venues.
• Wash, clean, and polish equipment to be ready for use.
• Clean entire kitchen areas including walks, freezers, walls, ceilings, and drains.
• Conduct inventory counts and fill requisitions as required.
• Follow Hazardous Material Management Program procedures for chemicals and safety data sheets.
• Protect company tools and assets per policy.
• Operate cleaning equipment to ensure sanitary items are used.
• Assist with dishwashing, pot washing, sorting, and cleaning of dishes and utensils.
• Participate in biohazard cleanup team as necessary.
• Maintain high cleanliness in kitchens, back-of-house areas, dock, and dumpsters.
• Operate machinery like pallet jacks, electric pallet jacks, tuggers, forklifts, and golf carts.

Position Overview

The Utility Porter is responsible for overall cleaning and maintaining the sanitation of all kitchen equipment and kitchen facilities, as well as the pick‑up and disposal of trash and cardboard.

Responsibilities

• Maintain cleanliness and sanitation of work areas, kitchens, food & beverage venues, and equipment in accordance with Health Department standards.
• Clean and sanitize kitchen hoods, stoves, grills, ovens, broilers, burner tops, steamers, kettles, braisers, deep fryers, dishwasher machines, stainless steel counters, drains, and other equipment.
• Pick up and dispose of trash and cardboard in all kitchens and F&B venues.
• Wash, clean, and polish equipment to ensure it is ready for use.
• Clean entire kitchen areas including work areas, freezers, walk‑ins, walls, ceilings, hoods, fans, floors, drains, and any areas assigned by management.
• Conduct inventory counts when assigned and fill requisitions as required.
• Follow Hazardous Material Management Program procedures for handling and disposing of chemicals, pesticides, and blood‑borne pathogens, including use of Safety Data Sheets.
• Protect company tools, equipment, machines, and other assets in accordance with company policies and procedures.
• Operate cleaning equipment and tools to ensure only clean and sanitary items are used, including dish machine, pot‑scrubbing station, and trash compactor.
• Assist with dish washing, pot washing, sorting, and cleaning of dishes, silverware, glasses, utensils, and assorted items as assigned.
• Participate in biohazard response clean‑up team as necessary.
• Maintain a high standard of cleanliness and orderliness in all kitchens, F&B venues, back dock, dumpster, and utility work, as well as back‑of‑house areas.
• Operate machinery such as pallet jacks, electric pallet jacks, tuggers, forklifts, and mobile golf carts.
• Temporary or permanent duties and responsibilities may be added or modified as deemed necessary.

Qualifications

• High School Diploma required.
• Previous experience in stewarding preferred.
• Valid Driver’s License and clean driving record required.
• Some experience with inventory controls, storeroom principles, and procurement processes preferred.
• Ability to frequently climb, stand, and work from a ladder while working overhead for extended periods.
• Ability to complete appropriate safety training and certifications to perform work tasks.
• Develop and maintain positive and productive working relationships with other employees and departments.
• Excellent interpersonal, customer service, and organizational skills.
• Willing and able to work a flexible schedule including holidays, nights, and weekends.
• Ability to work in a fast‑paced, busy, and somewhat stressful environment.
• Must be at least 21 years of age.

Physical Demands

Regularly required to stand and use hands and fingers to handle or utilize objects, tools, or controls; frequent reach with hands and arms; ability to push, pull, reach, bend, twist, stoop, stack, crouch, kneel, and balance. Must lift and/or move up to 10 pounds frequently, up to 25 pounds, and occasionally up to 50 pounds. Work in varied areas such as confined spaces.

Work Environment

Salary

$26.68 per hour
