Job Description

At Three Fold, we take our noodles very seriously, but it’s the building of a healthful, flavorful and rooted food culture that’s our mainstay. Our purpose is to cultivate a taste for authentic food made with high quality, fresh ingredients; yet tradition is the root to everything we make. Our handmade dumplings draw on those made in the homes of Northeast China, our vibrantly flavored noodles from the street vendors.

Everything we serve is made fresh daily, which means we’re looking to hire a team of dumpling dunking, noodle slurping, wonton-loving people to get the job done.

Job Summary

As a Team Member, you are responsible for delivering quick, welcoming hospitality at the counter while executing high-quality food preparation on the line. This role balances front-of-house guest engagement with back-of-house culinary execution, sanitation, and pace.

You will learn how to cook traditional Chinese dumplings and noodles, assist in food preparation, prepare asian- themed beverages, maintain cleanliness, and support the overall hospitality experience for our guests. This position requires a passion for food service, a commitment to providing excellent customer service, and eagerness to be cross-trained in multiple stations throughout the restaurant.

Front of House (FOH) Responsibilities
Guest Service & Order Management
  • Greet incoming guests promptly, guide them through the food and beverage menus, and answer questions regarding ingredients, preparation methods, and allergens.
  • Operate the POS system accurately, process transactions, handle loyalty program sign-ups, and manage order modifications and customizations.
  • Pack, verify, and garnish dine-in, takeout, and third-party delivery orders to ensure 100% accuracy before handoff.
  • Maintain dining room standards: bus and sanitize tables, wipe down counters, restock napkin/condiment stations, and keep beverage stations clean and stocked.
Barista & Coffee/Tea Service
  • Prepare and craft handcrafted espresso drinks, cold beverages, specialty teas, and seasonal beverages according to established house recipes, ratios, and presentation standards.
  • Maintain, clean, and backflush espresso machines, brewers, and grinders; regularly sanitize steam wands, pitchers, and drink-prep counters throughout the shift.
  • Open and close bar
Bar & Beverage Service
  • Pour, portion, and serve draft beers, wines, ciders, canned craft beverages, or signature house drinks in compliance with local liquor laws and house portion guidelines.
  • Verify legal drinking age by checking valid government-issued photo ID for any guest purchasing alcohol.
  • Monitor guest intoxication levels responsibly, practicing safe alcohol service and communicating concerns to the shift lead or manager.
  • Maintain the bar/drink station cleanliness: polish glassware, keep speed rails organized, wipe down draft taps and drip trays, and change out beverage kegs/syrup bibs safely as needed.
Back of House (BOH) Responsibilities
  • Assemble, portion, and garnish menu items accurately according to established recipes, presentation standards, and ticket times.
  • Perform station setup and basic culinary prep (chopping, portioning sauces, staging proteins, and preparing garnishes) adhering to FIFO rotation.
  • Support dishwashing operations: wash, sanitize, and restock cookware, utensils, and line inserts during and after rush periods.
Cross-Functional & Operational Duties
  • Flex between counter, packing station, and prep line based on rush patterns, manager direction, and sudden bottleneck areas.
  • Execute opening and closing checklists, including equipment breakdown, surface sanitization, trash removal, and line re-stocking for the incoming shift.
  • Communicate clearly and proactively with teammates (\"behind\",\"corner\",\"86 on [item]\") to ensure safety and seamless order flow.
  • Report equipment malfunctions, inventory shortages, or guest complaints immediately to the shift manager.
Qualifications
  • High school diploma or equivalent preferred, but not required.
  • Age 21 or older strongly preferred to comply with state and local regulations governing the preparation and service of alcoholic beverages.
  • Prior experience in a customer-facing role, preferably within a high-volume hospitality, fast-casual, or restaurant environment.
  • Clear verbal communication and active listening skills with an upbeat, guest-first attitude.
  • Demonstrated ability to maintain composure, focus, and efficiency during high-volume rushes.
  • Reliable availability across flexible schedules, including mornings, evenings, weekends, and holidays.
Physical Requirements
  • Stand and move continuously throughout the shift across dining, kitchen, and service areas.
  • Frequently lift, carry, and maneuver up to 25 lbs (e.g., dish racks, bus tubs, ingredient bins); occasionally lift up to 50 lbs (e.g., bulk food bags, ice buckets, kegs).
  • Reach, bend, twist, stoop, and kneel repeatedly during stocking, cleaning, and line service.
  • Clear visual acuity at close and intermediate ranges to read tickets, operate POS/kitchen display terminals, and inspect drink and food quality.
  • Ability to hear and verbally communicate clearly in a fast-paced, ambiently loud environment.
Working Conditions
  • Fast-paced restaurant environment with moderate to loud noise levels during peak hours.
  • Routine exposure to temperature swings, including hot kitchen equipment (ovens, steam wands, grills) and cold storage (walk-in coolers and freezers).
  • Work around wet surfaces, commercial dish machines, moving mechanical parts (slicers, blenders, grinders), and approved sanitizing and cleaning chemicals.
  • Flexible scheduling that adjusts based on seasonal flow, peak volume, and business needs.
