Job summary

Four Seasons Lanai is seeking a Cook II to join our luxury resort's kitchen team on Lanai. You will prepare menu items to guest specifications and support daily kitchen operations in a fast-paced environment.

Requirements include legal US work authorization, Hawaii Food Handler’s Card, and ServSafe certification. The role offers an hourly rate of $32.78 and a comprehensive benefits package including health, housing, and meals.

Qualifications

  • Legal work authorization to work in the United States.
  • Hawaii Food Handler’s Card and ServSafe certification required.
  • Tuberculous clearance required by Hawaii Department of Health.

Responsibilities

  • Prepare menu items to guest specifications while maintaining quality and portions.
  • Complete mise en place and set up workstation for service.
  • Manage assigned kitchen station and support Cook I as needed.
  • Prepare items in advance to align with forecasted needs and recipes.
  • Set up hot kitchen and sushi bar equipment and work areas.
  • Operate and clean kitchen equipment including fryers, ovens, and mixers.
  • Monitor temperatures, rotate stock, and prevent overproduction.
  • Identify shortages and communicate with leadership.
  • Assist in controlling food costs and waste reduction.
  • Participate in inventory accuracy and corrective actions.
  • Other duties as required.

NOBU COOK II

The Four Seasons Resort Lāna’i is looking for a Cook II who shares a passion for excellence and who infuses enthusiasm into everything they do. Our teams have the opportunity to shape our guest experience by providing exceptional knowledge of the Resort and exemplifying the Golden Rule in each interaction. Work authorization required.

NOBU LĀNA‘I

Set cliff side overlooking a protected marine preserve, NOBU LĀNA‘I offers sweeping panoramic views and innovative Japanese cuisine. Drawing upon Chef Matsuhisa's classical training as a sushi chef in Tokyo, his life abroad in South America and his travels around the world, his culinary style blends classical techniques with exotic global flavors. NOBU LĀNA‘I showcases signature new‑style Japanese cuisine, as well as new creations infusing local ingredients. Sip a signature cocktail in the lounge, take a seat at the sushi bar or enjoy dinner at one of the outdoor tables. Inspired by the simplistic lines found in Japanese architecture and a palette rich with teak timbers and meticulous wood detailing, the decor easily blurs the lines between interior and exterior space as diners gaze upon the sand and waters of Hulopo‘e Bay, often referred to as one of Hawaii’s most beautiful beaches.

What You’ll Do

The Cook II prepares menu items to guest specifications while supporting daily kitchen operations in a fast‑paced environment. Responsibilities include, but are not limited to:

  • Prepare food items to guest specifications while maintaining consistent quality and adhering to recipe cards, portioning, and presentation standards
  • Complete mise en place and set up assigned workstation for service periods as scheduled
  • Independently manage assigned kitchen station and support Cook I as needed, assuming Cook I responsibilities during absences
  • Prepare items in advance as required, ensuring production aligns with forecasted needs to prevent overproduction, inclusive proteins, produce, and all sauces/dressings preparations according to Nobu Specification and dividing them amongst the squeeze bottle needed per station.
  • Set up hot kitchen and sushi bar inclusive of slip mats, cutting boards, sanitizer buckets and more
  • Operate, maintain, and properly clean kitchen equipment, including but not limited to fryers, broilers, stoves, steamers, ovens, grills, mixers, slicers, food processors, tilt kettles, steam tables, and waffle irons
  • Date, label, rotate, and store food products according to food safety policies, maintaining proper temperatures at all timesMonitor par levels, determine prep and freezer pulls, and ensure proper line setup for each shift
  • Identify and communicate out‑of‑stock items or potential shortages to leadership
  • Return unused food items to designated storage areas, ensuring proper covering, labeling, and dating
  • Assist in controlling food costs by minimizing waste, monitoring product usage, and following established waste‑reduction procedures
  • Support inventory accuracy and participate in corrective action planning related to food cost or utilization issues

  • Successful candidate must possess legal work authorization in United States
  • The hospitality business functions seven (7) days a week, twenty‑four (24) hours a day and scheduled days and times may vary based on need. Holidays and weekends availability is required.
  • Required by the Hawaii State Department of Health to obtain a Tuberculous (TB) clearance card
  • Hawaii Food Handler’s Card and ServSafe is required for this role
  • Ability to stand for extended periods, lift up to 70 lbs, and push/pull as needed during shifts
  • Ability to operate, maintain and properly clean all equipment and utensils. Proficient knife skills and ability to multi‑task.
