Job summary

Promontory Club is seeking a Sushi Chef for The Peak at the Nicklaus Clubhouse in Park City. The role focuses on traditional Japanese sushi rice, fish prep, and maintaining quality in a high-end dining setting.

You will train, guide, and supervise kitchen staff to uphold the highest standards while handling busy hours and ensuring allergy-conscious customizations.

Qualifications

  • High school diploma or GED preferred.
  • Culinary Degree from an approved school or equivalent preferred.
  • Must maintain TIPS and ServeSafe certifications.
  • Must be at least 21 years of age.
  • Experience in culinary management a plus.

Responsibilities

  • Prepare traditional Japanese sushi rice, and cut/fillet various fish.
  • Customize customer orders according to preferences and allergies.
  • Maintain restaurant standards during busy periods.
  • Cut, slice, and fillet different types of fish with precision.
  • Inspect quality of fruits, vegetables, and fish and inform Executive Chef if substandard.
  • Maintain a clean work environment to prevent contamination.
  • Regularly take inventory of food supplies and report issues.
  • Sterilize utensils and equipment before use.
  • Coordinate with wait staff for special requests and allergies.
