Required: Are you interested in knowing more about where your meat comes from and how it is produced?

Preferred: In this position you will learn slaughter, processing and sales procedures, including how to cut entire beef, pork, lamb and goat carcasses, how to make these cuts presentable for sale following all labeling and sanitary procedures and how to maintain a proper sales floor and make connections with customers.

Primary Responsibilities:

• Assist on slaughter days. This includes skinning, dressing, and splitting the carcass in a timely and sanitary manner.
• Assist with maintenance and sanitary practices on all floors (slaughter floor, processing floor and sales floor).
• Helping to process a variety of species and assist with preparing all meats for the sale floor and custom processed animals for individual community members.
• Processing practices include using saws and knives to cut specialty steaks and roasts, using the grinder to produce ground products, and using the vacuum sealer to package and label all meat products.
• Duties also include running the sales counter when available to do so.
• Follow all sanitary practices set in place by the plant's HACCP plan.
