Job summary

Sul Ross State University is seeking a Student Worker-Meat Lab in Alpine to assist with slaughter, processing, and sales of beef, pork, lamb and goat products. You will learn cuts, handling, labeling, and sanitary procedures while contributing to an efficient sales floor and customer engagement.

Work includes handling cooled meat in a 40 deg F environment, with lifting up to ~50 lbs, and complying with HACCP sanitation standards as part of daily responsibilities at the Meat Lab.

Responsibilities

• Assist on slaughter days. This includes skinning, dressing, and splitting the carcass in a timely and sanitary manner.
• Assist with maintenance and sanitary practices on all floors (slaughter floor, processing floor and sales floor).
• Helping to process a variety of species and assist with preparing all meats for the sale floor and custom processed animals for individual community members.
• Processing practices include using saws and knives to cut specialty steaks and roasts, using the grinder to produce ground products, and using the vacuum sealer to package and label all meat products.
• Duties also include running the sales counter when available to do so.
• Follow all sanitary practices set in place by the plant’s HACCP plan.
