Job summary

Estancia La Jolla Hotel & Spa is seeking a Stewarding Manager to oversee the stewarding operation across all outlets, ensuring sanitation and cleanliness of kitchens, bars, and service areas; you will assign and monitor daily cleaning checklists and organize equipment for efficient operations.

You will lead hiring and training, develop SOPs, prepare schedules from a 10-day forecast, support health-code compliance, and liaise with vendors.

Qualifications

• One or more years related experience required.
• Prior lead or supervisory experience in a similar role desired.
• Ability to lead others in the department by mentoring and providing training that results in staff that meets/exceeds guest expectations and provides a high level of service.

Responsibilities

• Oversee stewarding across outlets to ensure sanitation and cleanliness.
• Assign and monitor completion of daily cleaning checklists.
• Monitor collection of trash for Food and Beverage.
• Organize equipment and supplies for orderly and efficient operations.
• Maintain health code standards in compliance with local, state, and federal rules and laws.
• Participate in interview and hiring; train staff to company standards and issue discipline when appropriate.
• Draft and implement SOPs for equipment, chemicals and supplies; train stewards on processes.
• Prepare schedules based on a 10-day forecast and reallocate resources as needed.
• Maintain dish machine equipment per manufacturer standards.
• Walk the service floor to ensure staff coverage.
• Enforce health code standards and liaise with inspections.
• Oversee monthly deep-clean of scheduled areas and vendor relations.
• Prepare and disseminate shift reports.

THE JOB:

The Stewarding Manager is responsible for overseeing and directing the stewarding operation in all outlets and maintaining sanitation and cleanliness of all kitchens, bars, and service areas. The Stewarding Manager will.

Assign and monitor completion of daily cleaning checklists.

Monitor collection of trash for Food and Beverage

Ensure all chemicals, trash bags, detergents, towels, and other equipment are delivered to proper areas.

Organize equipment and supplies for orderly and efficient operations.

Maintain health code standards in compliance with local, state, and federal rules, regulations, and laws.

Participates in interview and hiring process for line-level stewards; trains all team members and temporary labor to Company standards; issues discipline when appropriate.

Drafts and implements Standard Operating Procedures (SOPs) regarding use of equipment, chemicals and supplies and trains all stewards on processes related to SOPs.

Prepares schedules based on a 10-day forecast; assesses working pace of team members and reallocates team member resources determined by business need.

Maintains dish machine equipment in accordance with manufacturer standards.

Walks the service floor; moves between steward service stations to ensure line staff are in assigned areas and to ensure each area is sufficiently staffed.

Enforces health code standards and serves as a point of contact for administrative or government agencies to conduct inspections.

Oversees and manages staff for monthly deep-clean of scheduled areas.

Serves as point of contact for outside vendor relations.

Prepares and disseminates shift report.
