Job summary

Thompson Dallas, the Texas debut at The National, rises above the Dallas skyline with 219 guestrooms, two signature dining venues, and 20,000 square feet of event space. The Stewarding Lead oversees stewarding operations across all kitchens and outlets, providing day-to-day leadership and ensuring cleanliness, sanitation, and efficient back-of-house support.

Qualifications

  • Previous stewarding, kitchen sanitation, or dishwashing experience required.
  • Previous leadership or supervisory experience preferred.
  • Hotel, resort, upscale restaurant, or high-volume food service experience preferred.
  • Knowledge of sanitation standards, food safety practices, and safe chemical handling procedures required.
  • Food Handler Certification required at time of hire (or within the timeframe required by local regulations).
  • Strong organizational, communication, and leadership skills.
  • Ability to prioritize multiple tasks in a fast-paced, team-oriented environment.
  • Flexibility to work mornings, evenings, weekends, and holidays as business demands require.

Responsibilities

  • Lead, coach, and support the stewarding team across all kitchens and food & beverage outlets.
  • Oversee daily stewarding operations to ensure timely cleaning and sanitization of kitchen equipment, cookware, utensils, china, glassware, silverware, and service items.
  • Maintain cleanliness and organization of all kitchens, dish rooms, storage areas, loading docks, and other back-of-house spaces.
  • Coordinate daily staffing assignments and assist with scheduling, onboarding, training, and performance coaching.
  • Monitor compliance with Hyatt standards and local health, sanitation, and safety regulations.
  • Ensure proper handling, storage, and disposal of waste, recycling, chemicals, and cleaning supplies.
  • Maintain inventory of stewarding supplies, chemicals, and equipment; communicate ordering needs to leadership.
  • Inspect and maintain commercial dishwashing equipment and report maintenance concerns promptly.
  • Support Culinary and Food & Beverage teams during high-volume service periods, banquets, and special events.
  • Promote a safe, positive, and productive work environment while modeling Hyatt's values and service standards.

Thompson Dallas, the Texas debut at The National, a 52-story building boasting a midcentury-modern hexagon design, rises prominently above the Dallas skyline. Designed to encompass an entire city block, Thompson Dallas offers 219 guestrooms, including 52 suites, two signature dining venues, and 20,000 square feet of stunning event space. Additional amenities include a resort-style pool, custom-curated fitness facility, spa, and dog park. Thompson Dallas brings guests and the community together through an inspired tribute to history, design, and culture.

The Stewarding Lead oversees stewarding operations across all kitchens and food & beverage outlets at Thompson Dallas, ensuring exceptional standards of cleanliness, sanitation, organization, and operational support. This position provides day-to-day leadership to the stewarding team, promotes a culture of safety and teamwork, and partners closely with Culinary and Food & Beverage leadership to maintain efficient back-of-house operations. The Stewarding Lead is responsible for supervising dishwashing operations, equipment care, sanitation programs, inventory management, and compliance with all local health and safety regulations.

  • Assist leadership with deep cleaning projects and preventative sanitation initiatives.
  • Safely operate commercial dishwashing, cleaning, and sanitation equipment.
  • Perform other duties as assigned by management.
