CUT New York | Wolfgang Puck Fine Dining Group

The PM Steward/Porter is an essential member of the back-of-house team, responsible for maintaining the highest standards of cleanliness, sanitation, organization, and overall appearance throughout CUT New York. This role supports both the culinary and restaurant teams by ensuring that dishware, cookware, equipment, kitchen areas, and designated restaurant spaces are consistently clean, safe, and service-ready.

The ideal candidate takes pride in maintaining a clean and organized environment, works efficiently in a fast-paced setting, and understands that exceptional hospitality begins with a safe, sanitary, and well-maintained restaurant.

This role is an evening position. Must be available during evening hours.

Essential Job Functions

Dishwashing & Kitchen Support

  • Sort, rinse, and properly load glassware, china, silverware, cookware, utensils, and kitchen equipment into dish racks for machine washing.
  • Unload, sort, and properly store clean items, ensuring china, glassware, cookware, and utensils are readily available to the culinary and service teams.
  • Rewash items as necessary to ensure they meet established cleanliness and sanitation standards.
  • Wash pots, pans, trays, and other kitchen equipment by hand as required.
  • Monitor dish machine operation, including wash and rinse temperatures, water levels, and overall functionality; promptly notify management of any issues.
  • Change dish machine water as needed and maintain the dish machine and surrounding area in clean, sanitary working condition.
  • Fill and empty soaking tubs using appropriate cleaning and sanitizing solutions.
  • Assemble and disassemble dish machine components as needed for thorough cleaning.
  • Set up and break down the dishwashing area before and after service.
Restaurant & Back-of-House Cleanliness
  • Maintain cleanliness and organization throughout designated kitchen, back-of-house, storage, receiving, and service areas.
  • Sweep and mop kitchen and designated restaurant floors, keeping surfaces clean, dry, and free of hazards.
  • Clean, roll, and properly store floor mats.
  • Immediately clean spills and other hazards to help maintain a safe working environment.
  • Clean and sanitize designated equipment, work surfaces, shelving, and other areas as directed.
  • Perform routine cleaning of restrooms and other designated restaurant areas.
  • Empty trash and recycling throughout the restaurant and transport waste to designated disposal areas.
  • Maintain cleanliness and organization around exterior dumpster and waste disposal areas.
  • Break down and properly dispose of cardboard and other waste materials.
  • Assist with moving, organizing, and storing supplies, equipment, and other items as directed.
  • Maintain a clean, organized, and professional appearance of all assigned work areas throughout the shift.
Team & Service Support
  • Work collaboratively with the culinary, service, and management teams to ensure the restaurant is consistently prepared for service.
  • Respond promptly to requests for clean equipment, dishware, supplies, or general restaurant support.
  • Maintain awareness of restaurant activity and proactively address cleanliness and sanitation needs.
  • Follow all established health, safety, sanitation, and chemical-handling procedures.
  • Perform other related duties and responsibilities as assigned by management.

Education
  • High school diploma or GED preferred.
Experience
  • Previous experience as a Steward, Porter, Dishwasher, Utility Worker, or in a similar restaurant or hospitality role preferred.
  • Previous experience in a high-volume or fine-dining restaurant is a plus.
  • Knowledge of proper sanitation, food safety, cleaning procedures, and safe chemical handling preferred.
  • Ability to follow written and verbal instructions and established procedures.
  • Ability to work effectively and efficiently in a fast-paced restaurant environment.

Physical Requirements

While performing the duties of this job, the employee is regularly required to:

  • Stand and walk for extended periods.
  • Use hands and arms to handle dishes, cookware, equipment, cleaning tools, and other objects.
  • Reach, bend, stoop, kneel, crouch, and crawl as needed.
  • Push, pull, lift, and carry equipment, supplies, trash, and other materials.
  • Work around wet floors and surfaces.
  • Communicate verbally and hear instructions in a busy restaurant environment.
The Employee Must Be Able To
  • Regularly lift and/or move up to 10 pounds.
  • Frequently lift and/or move up to 25 pounds.
  • Occasionally lift and/or move up to 50 pounds.

Vision requirements include close vision, distance vision, color vision, peripheral vision, depth perception, and the ability to adjust focus.

Work Conditions
  • Fast-paced, high-volume restaurant environment.
  • Regular exposure to water, cleaning chemicals, steam, heat, and moving mechanical equipment.
  • Occasional exposure to cold temperatures, including walk-in refrigerators/freezers and exterior areas.
  • Wet and potentially slippery surfaces.
  • Work environment is typically loud and active, particularly during service.
  • Requires adherence to all applicable health, safety, sanitation, and workplace procedures.
Compensation & Benefits

Pay: $18.00 - $22.00 per hour
