Job summary

Oak Grove Racing, Gaming & Hotel in Oak Grove, KY is seeking a Kitchen Steward to uphold the cleanliness of kitchen areas, dishware, and service ware under the guidance of Kitchen Supervisors.

You will clean broilers, fryers, grills, ovens, range hoods, floors, and walk-ins, while adhering to health and safety standards and proper chemical use. Availability for weekends and nights is preferred.

Qualifications

Responsibilities

• Maintain overall cleanliness of kitchen areas, dishware, tableware, and service ware.
• Clean broilers, fryers, grills, ovens, range hoods, and ware washing areas.
• Safely use chemicals and follow health and safety standards.
• Break down and set up dishwashers; manage trash and dumpsters; maintain floors and walk-ins.

Oak Grove: Oak Grove Racing, Gaming & Hotel (the “Property”) is a newer facility in a high traffic area in the heart of Oak Grove, Kentucky, and across the street from a large Army post, Ft. Campbell. The Property is 10 miles from Clarksville, TN and less than 60 miles northwest of downtown Nashville, TN.

Job Summary

The Kitchen Steward is responsible for the overall cleanliness of kitchen areas and dishware, tableware, and service ware under the guidance of the Kitchen Supervisors.

Essential Duties And Responsibilities

• Cleans according to standards the following items and areas:
  • Broilers
  • Deep friers
  • Grills
  • Ovens
  • Range hoods
  • Ware washing machines
  • Floors
  • Walk-ins
• Carefully rinses all dishware, tableware, and service ware for restaurants before sending them through the dish machine.
• Knows and practices Health & Safety standards as set forth by governmental agencies.
• Washing hands at each possible point of contamination.
• Clean, deck brushes, and mop all kitchen floors.
• Follows 3-compartment sink procedures.
• Weekly de-liming of each dish machine.
• Use all chemicals according to use and know where sheets are located.
• Reports any malfunctions of the dishwashing machine, including temperatures (too low or too high) or any other type of equipment used.
• Sets up, breaks down, and maintains all dishwashers.
• Empties all trash and cardboard boxes to the dumpsters.
• Cleans and maintains all cook lines.
• Any other duties as assigned by supervisors to maintain kitchen, including but not limited to:
  • Cleaning ice machines
  • Cleaning hand sinks
  • Filling paper towel and soap dispenser
  • Use and clean floor signs

Required Skills And Abilities

• Must have the ability to multi-task.
• Communication skills for safety.
• Gives good internal customer service to team members.
• Available to work when needed, including weekends, holidays, and nights.

Education And Experience

• High school diploma or equivalent preferred.
• Customer Service or Food & Beverage experience is preferred.
• Able to obtain and maintain a valid Kentucky gaming/racing license
