Marcus Corporation is seeking a dedicated Sous Chef for Grand Café at the Grand Geneva Resort & Spa in Lake Geneva, Wisconsin. You will lead culinary and stewarding staff, continually evolve outlet menus, manage costs, and collaborate with sales and operations to exceed client standards.

You will also mentor team members and ensure top quality and sanitation throughout all shifts. The role requires 2–4 years of food management experience, culinary schooling preferred, and the ability to work

Qualifications

• 2-4 years of food management experience in multi-venue operations.
• Proficient in safety and sanitation standards with kitchen equipment.
• Strong math skills for recipe calculations and portions.
• Fluent English for reading recipes and staff communication.
• Ability to lift up to 200 lbs and work in extreme temperatures.

Responsibilities

• Assist in interviewing, hiring, training, supervising, scheduling and activities of chefs and staff.
• Assist in evolving menu items for all outlets based on trends and availability.
• Interact with clients for event planning, budgeting, and execution.
• Provide recipes, specs and schedules to line staff.
• Develop and maintain vendor relationships.
• Oversee quality and sanitation of all food leaving the kitchen.
• Ensure kitchen sanitation and cleanliness standards.
• Create employee schedules to meet staffing needs.
• Purchase according to volume and need.
• Assist with Executive Chef duties in their absence.
