Chartwells Higher Education Dining Services at Hofstra University in Hempstead, NY is seeking a full-time kitchen lead. The role supports the Executive Chef, coordinates cooks and food-service associates, and steps in when the Executive Chef is unavailable.

The position offers a Tuesday–Saturday schedule with a fixed pay rate of $25.00 per hour; hours may vary including some nights and weekends. Prior catering and high-volume experience are preferred, with responsibilities spanning recipe

Responsibilities

• Cooks and prepares food following approved recipes and deadlines.
• Supervises hourly food service associates, including scheduling and training.
• Stores food following safety procedures and sanitation guidelines.
• Ensures proper food handling, presentation, and serving temperatures.
• Maintains sanitation of equipment, supplies and utensils.
• Interacts with customers to resolve complaints in a friendly manner.
• Explains daily menu items to associates and customers.
• Monitors peak production and service hours.
• Monitors inventory and reports low supplies.

Job Summary

Helps Executive Chef prepare and cook foods. Coordinates activities of cooks and other food-service associates. Assumes responsibility for kitchen and food-service associates in the absence of Executive Chef.

Location

Hofstra University, 1000 Fulton Avenue, Hempstead, NY 11550. Full-time schedule; Tuesday through Saturday, hours may vary. Some nights and weekends as needed. Fixed Pay Rate: $25.00 per hour.

Qualifications

• Prior high-volume experience preferred.
• Minimum two (2) years of catering experience.
• Experience managing kitchen staff.
• Good knife skills.

Essential Duties and Responsibilities

• Cooks and prepares food following approved recipes and production standards, ensuring all deadlines are met based on production orders.
• Supervises hourly food service associates, including interviewing, scheduling, payroll, training, counseling, participating in reviews, and recommending disciplinary action as appropriate.
• Stores food in designated areas following all corporate, state, and federal food safety and sanitation procedures.
• Ensures proper food handling, presentation, portion control, and maintenance of appropriate serving temperatures.
• Maintains sanitation of equipment, supplies, and utensils; cleans workstation thoroughly before leaving area; keeps display equipment clean and free of debris during meal service complying with sanitation, safety, production, and merchandising requirements.
• Interacts with customers to resolve complaints in a friendly, service-oriented manner and relays relevant information directly to supervisor.
• Demonstrates complete understanding of daily menu items and accurately explains them to associates and customers.
• Keeps up with peak production and service hours.
• Monitors inventory and deliveries of product and supplies; tracks product production, consumption, and waste; informs supervisor when supplies or product are low.
• Performs other duties as assigned.

Additional Information

There may be periods (winter and summer breaks) when food service needs decline or cease. Such periods may be unpaid and considered temporary layoff. Depending on business needs, you may be required to work year-round, possibly at a different location during break periods.
