Job summary

LaPlaya Beach & Golf Resort, a Noble House Resort, is seeking a Sous Chef to lead the Club Kitchen in a high-volume, luxury setting.

You will oversee daily kitchen operations, develop menus, and ensure top-quality dining for exclusive members and guests, while mentoring the kitchen team and maintaining impeccable food safety standards.

Qualifications

• 2+ years in high-volume luxury hotel, resort, or banquet with fine dining focus.
• Completion of a technical culinary education or apprenticeship; Certificate in Culinary Arts preferred.
• Food service permit or valid health/food handling credentials.
• Experience with various cooking methods and industry best practices.

Responsibilities

• Lead the Club Kitchen team and oversee daily BOH operations.
• Develop menus, recipes, and adapt dishes per guest dietary needs.
• Ensure health, safety, and food hygiene standards are met; train new staff.

The JOB: Sous Chef

Our award-winning members-only Beach Club fine dining restaurant seeks a sous chef that has an outgoing personality, wanting to elevate the dining experience while having fun and creating memorable dining experiences for our exclusive club members. The ideal candidate has 2+ years’ experience in upscale culinary dining and enjoys working on his or her feet.

Requirements

• Leads team by example alongside the Club Executive Chef to deliver effective and efficient dining experiences by overseeing the BOH Club operations as a whole
• Manage daily operations of the Club Kitchen
• Oversee the Club Kitchen team members and direct food preparation of the Club Kitchen
• Assign specific tasks and responsibilities to Club Kitchen team members and prepare staff roster
• Meet with Club Executive Chef to review schedules, assignments, anticipated business levels and changes
• Review daily specials with team members
• Review BEO sheets and make note of any changes
• Maintain Club kitchen equipment, such as ovens, freezers, grills, food processers, etc. to ensure they are in good working order
• Monitor the physical inventory of kitchen equipment, supplies and food items
• Perform quality control by inspecting plates before guests receive them, ensuring the quality of the dish are up to standards
• Order items as necessary and generate purchase orders
• Develop new menu items and create recipes
• Incorporate new or different cooking methods and adapt dishes
• Research recipes to inspire new dishes
• Establish professional relationships with the team and provide educational opportunities to teach and develop skills and on other areas of the business
• Maintain good working relationships with key suppliers
• Cultivate relationships with wholesale food suppliers, farmers and other vendors, visiting sites and sampling ingredients
• Research current food trends and techniques
• Assess the skills of existing team members and determine gaps or opportunities to recruit the right team members
• Responsible for training new team members to Club Kitchen standards
• Ensure the kitchen adheres to all health and safety regulations
• Follow food safety guidelines and ensure all staff have adequate training on food hygiene practices, maintaining proper food storage and ensuring the quality of all ingredients
• Manage guest complaints and work out solutions to ensure guests are satisfied with their dining experience
• Adapt menu items to cater to specific guest dietary needs
• Monitor performance of team members and provide feedback or resolves issues as needed
• Ensure that team members complete all opening and closing duties before the start and end of each shift
• Process payroll for Club team members
• Assist in creating departmental budget
• Ensure ongoing training is provided for team members
• Manage food budget and profits and losses
• Other duties as assigned

Education & Experience:

• 2+ years experience in a high-volume luxury hotel, resort or banquet operation with a focus on fine dining
• Completion of a technical culinary education or apprenticeship program; Certificate in Culinary Arts preferred
• Food service permit or valid health/food
• Experience with various cooking methods and procedures
• Familiar with industry best practices
