Job description

Cornerstone Bistro in Wayne, PA is looking for a Sous Chef

We are seeking a strong, experienced Sous Chef with at least 1 year of experience in an upscale restaurant. The ideal candidate will have a hands-on approach to menu planning, ordering, and managing line cooks/Jr Sous. Oyster shucking experience is required, and there is an opportunity to grow and learn with some of the best in the industry.

We desire a motivated and passionate Sous to join our team.

Requirements include:

  • 4+ years of line cook experience in a fast-paced, upscale dining environment
  • Ability to work well under pressure
  • Willingness to work all stations
  • Strong team dynamic and positive attitude during high-pressure situations
  • Strong work ethic and dedication to quality
  • Ability to perform physical requirements (lift up to 50 lbs)
  • Food Safety Certification (preferred)

Key duties:

  • Manage prep lists and communicate about food inventory
  • Execute the menu properly
  • Ensure restaurant cleanliness and proper setup and closing procedures
  • Follow health department standards
  • Stand and walk for extended periods
  • Work efficiently in a fast-paced environment, communicating with peers

Our restaurant features high-quality ingredients highlighting seasonal flavors, blending influences from California wine country, coastal New England, and rustic France & Italy. Our menu includes small and large plates, tasting menus, cheese & charcuterie, oysters, fresh pasta, and grilled meats & seafood.
