Job summary

MGM Resorts International in Las Vegas is seeking a hands-on Sous Chef for Mandalay Bay's Convention and Banquets team. You will oversee daily banquet kitchen operations, mentor culinary staff, and ensure every plate meets our standards for taste, presentation, and food safety.

This high-volume leadership role requires organizational excellence, strong communication, and a customer‑focused approach to deliver memorable dining experiences.

Qualifications

• High School Diploma or GED required.
• 21+ years of age or older.
• 2+ years of relevant experience in a high-volume setting.
• 2+ years of leadership experience in a culinary position.

Responsibilities

• Oversee daily banquet kitchen operations.
• Mentor culinary staff and ensure standards are met.
• Ensure every plate meets standards for taste, presentation and food safety.

As an Sous Chef, you will oversee daily banquet kitchen operations, mentor culinary staff, and ensure every plate meets our standards for taste, presentation, and food safety. The Day-to-day

• Maintain quality and proper presentation of food Drive the customer relation management system by ensuring that all such orders are handled correctly
• Communicate with chefs, management, employees and guest efficiently with proper reporting, and meetings
• Schedule and maintain the budgeted labor costs as well as potential food cost
• Understand and utilize Stratton Warren system properly for purchasing, release orders and cost transfers

The Ideal Candidate

• High School Diploma or GED
• 21+ years of age or older
• 2+ Years of prior relevant experience in a high-volume setting
• 2+ years of leadership experience in a culinary positon
