Palace Meat Company in Fresno, CA is seeking a skilled butcher to join our team. You will break down, trim, and portion primal cuts and operate essential equipment while upholding food safety standards.

You’ll assist customers with selections and cooking recommendations, maintain a clean, safe workspace, and communicate inventory needs to management. Strong knowledge of meat cuts and tool proficiency are required.

Qualifications

• Proven experience as a butcher, meat cutter, or in a similar meat processing role
• Strong knowledge of meat cuts, grades, and preparation techniques
• Proficiency with butchering tools and equipment including saws, knives, and slicers
• Understanding of food safety regulations and proper meat handling/storage procedures
• Ability to stand for extended periods and lift heavy carcasses or meat products
• Strong attention to detail and commitment to quality and consistency
• Excellent customer service and communication skills

Responsibilities

• Break down, trim, and portion primal and sub-primal cuts of meat to customer and company specifications
• Operate and maintain butchering equipment including band saws, cleavers, and grinders
• Ensure proper meat storage, rotation, and temperature compliance to meet food safety standards
• Prepare custom cuts, ground meats, and specialty products based on customer requests
• Maintain a clean, organized, and sanitary work environment in accordance with health codes
• Assist customers with product selection, cut preferences, and cooking recommendations
• Monitor inventory levels and communicate restocking needs to management
