Responsibilities

• Break down, trim, and portion primal and sub-primal cuts of meat to customer and company specifications.
• Operate and maintain butchering equipment including band saws, cleavers, and grinders.
• Ensure proper meat storage, rotation, and temperature compliance to meet food safety standards.
• Prepare custom cuts, ground meats, and specialty products based on customer requests.
• Maintain a clean, organized, and sanitary work environment in accordance with health codes.
• Assist customers with product selection, cut preferences, and cooking recommendations.
• Monitor inventory levels and communicate restocking needs to management.
