Job summary

Pelican Valley Senior Living is hiring a Director of Dining to lead Dining Services across the campus, including care center and assisted living. You will oversee nutrition services, menu planning, food safety, budgeting, inventory, and daily operations.

The role requires a CDM or RD credential (or eligibility to obtain within the first year) and prior leadership in dining/healthcare settings. Competitive salary and comprehensive benefits are offered.

Qualifications

• CDM or RD credential preferred; must meet eligibility if not held within year.
• Leadership or supervisory experience in dining/healthcare/senior living required.
• Knowledge of food safety, sanitation, and regulatory requirements.
• Ability to lead across multiple locations and develop staff.

Responsibilities

• Provide overall leadership and management of Dining Services across campus, including food preparation and service, menu planning, staffing, department operations, and regulatory compliance.
• Direct Dining Coordinators, Cooks, and Dining Assistants.
• Ensure compliance with federal and state regulations, licensing, food safety standards, and PVSL policies.
• Oversee menu planning and ensure meals meet nutritional requirements and approved menus.
• Provide nutrition services and complete required clinical nutrition documentation.
• Participate in Care Team meetings and resident care conferences.
• Provide education and training to Dining Services staff on nutrition, sanitation, and compliance.
• Maintain CDM or RD credentials and continuing education requirements.
