Seneca Resorts & Casinos is seeking a Senior Cook to lead advanced cooking across multiple stations and ensure products meet recipe specifications. The role requires collaboration with Sous Chefs, training junior cooks and maintaining high sanitation and safety standards in a fast-paced casino kitchen.

Starting rate is $22.00 per hour with negotiable compensation based on experience. Applicants must be 18+, have a high school diploma or equivalent, and possess at least 3 years of advanced

Qualifications

• Must be 18 years of age or older upon employment.
• High school diploma or equivalent required. Culinary education/experience preferred.
• Three (3) years of advanced cooking skills required.

Responsabilités

• Insure food items are properly stored, including raw materials and prepared items.
• Inspect all outgoing orders for proper preparation, i.e. portion control, presentation.
• Ensure items are available for guest consumption before opening; assemble supplies and equipment.
• Take inventory of meats and seafood; know items and quantities needed.
• Coordinate food orders to proper cooks.
• Prepare all items per recipe specifications.
• Review production schedule for food requirements and variety.
• Complete production sheets with Sous Chefs as required.
• Maintain clean work areas, utensils, and equipment.
• Regulate temperatures of ovens, broilers and grills.
• Maintain proper food temperatures per ServSafe standards.
• Label, date and rotate products for safety.
• Work across stations (roast, fry, pasta, veg, grill, pantry, breakfast, saute).
• Teach and mentor Cooks and Production Cooks.
• Maintain professionalism with guests and staff.
• Attend required trainings within nine months.
