Job summary

Under Canvas is seeking a Lead Cook for Acadia, Surry, ME. This seasonal, hourly role supports the General Manager of F&B by leading the culinary team, overseeing recipes, food safety, and brand standards, and acting as a line/catering chef or expediter.

Focus may be on daily service or food prep and catering, with housing available for the duration. You will manage inventory, safety logs, and collaborate with a tight-knit team to deliver outstanding guest experiences in an outdoor setting.

Qualifications

• High School Diploma or GED required.
• 1 year of experience in culinary leadership.
• Love of culinary and the outdoors.
• Experience delivering training and leading a team of 2–10 people.
• Food handler certification and TIPScard required prior to first day.

Responsibilities

• Know all menu item recipes, portions, and ingredients with attention to allergens.
• Participate in menu development including daily specials and catering menus.
• Maintain guest and team safety by ensuring all food handling safety and storage logs are implemented and tracked.
• Keep a clean and safe workspace through daily/weekly cleaning tasks and ensure FIFO in storage areas.
• Assist with inventory including ordering, receiving, waste tracking, and counts.
• Lead by example, stay composed, take action, and solve problems in unpredictable situations.
• Collaborate with team, value teamwork, and provide quick support when needed.
• Learn about local area, culture, and on-site activities; maintain a positive attitude.
