Job summary

Hyatt Vacation Ownership at Highlands Inn in Carmel Highlands, CA seeks a Cook 3 to master all cooking methods for hot and cold lines. You will cut meat and fish, prepare sauces, and be able to operate at any station, including banquet settings when needed.

Qualifications

• Must be proficient in all cooking methods for hot and cold line stations.
• Full proficiency in meat cutting and fish cutting.
• Able to work at any station and as banquet cook when needed.
• Shift: 1st shift; must be available to work weekends and holidays.

Responsibilities

• Directly procure all food items and follow standard recipes and line check sheets to properly set up and maintain station.
• Maintain a professional appearance and positive attitude at all times.
• Follow daily prep lists and production schedules for each day’s service.
• Work with Chef / supervisors to prepare menus and specials.
• Consistently maintain high standards of quality, cost, eye appeal and flavor.
• Follow sanitation procedures for all kitchen areas.
• Train to work on hot and cold line stations, butchery, sauce and soup production.
• Prepare prep for hot line items including fryer, griddle, char broiler, oven, and middle.
• Ensure end-of-shift sanitation and station cleanliness.
• Assist in food procurement, delivery, storage and usage; assist with cold food at banquets.
