Job summary

Juanita's Foods in Los Angeles, CA is recruiting a Retort Operator to safely and efficiently run retort systems in accordance with FDA and USDA process schedules. You will ensure loads are properly processed, documented, and reported, supporting production flow and continuous improvement.

You must have a High School Diploma or GED, 5+ years of manufacturing experience, and a valid California Retort License or the ability to obtain one, plus Better Process Control School certification and State

Qualifications

• High School Diploma or GED is required.
• Minimum of 5 years’ experience in a manufacturing environment preferred.
• Current State of California Retort License or ability to obtain.
• Better Process Control School certification required.
• Ability to pass State Retort Certification.
• Strong organizational and communication skills.
• Bilingual (English/Spanish) preferred.
• Ability to work weekends, holidays, and peak season schedules.

Responsibilities

• Operate retort systems according to FDA/USDA-approved process schedules.
• Load and unload retorts safely and efficiently to maintain production flow.
• Monitor and document cooking temperatures, times, and pressures for safety compliance.
• Draw incubation and evaluation samples for QA coordination.
• Complete and maintain accurate daily production reports, logbooks, and batch records.
• Identify and report deviations, equipment malfunctions, or product irregularities to Production Supervisor or QA.
• Perform quality inspections including temperature checks and basket tracking.
• Coordinate with Maintenance for troubleshooting and repairs when needed.
• Maintain a clean and orderly work area in GMPs and sanitation standards.
• Follow all safety procedures, including Lockout/Tagout (LOTO) and wear PPE.
• Support audits by providing accurate records and documentation.
• Attend required food safety and quality training sessions.
• Suggest process improvements to enhance efficiency, quality, and safety.
• Assist coworkers to meet workflow and production goals.
• Perform other duties as assigned.

Job Summary:

This role ensures that all product loads are properly processed, documented, and reported, while maintaining strict compliance with food safety, quality, and regulatory standards. The Retort Operator plays a key role in supporting production flow, maintaining equipment functionality, and contributing to continuous improvement efforts.

Requirements

Duties and Responsibilities:

• Operate retort systems according to FDA/USDA-approved process schedules.


• Load and unload retorts safely and efficiently to maintain production flow.


• Monitor and document cooking temperatures, times, and pressures to ensure compliance with food safety requirements.


• Draw incubation and evaluation samples for quality checks and coordinate with QA as needed.


• Complete and maintain accurate daily production reports, logbooks, and batch records.


• Identify and report any processing deviations, equipment malfunctions, or product irregularities to the Production Supervisor or QA.


• Perform quality inspections including temperature checks and basket tracking.


• Ensure equipment is functioning properly and coordinate with Maintenance for troubleshooting and repairs.

Qualifications and Experience:

• High School Diploma or GED required.


• Minimum of 5 years’ experience in a manufacturing environment preferred.


• Current State of California Retort License or ability to obtain.


• Completion of Better Process Control School certification required.


• Ability to pass State Retort Certification.


• Strong organizational and communication skills.


• Bilingual (English/Spanish) preferred.


• Ability to work weekends, holidays, and peak season schedules.

Physical Requirements:

• Ability to work in hot, humid environments.


• Must be able to lift up to 50 pounds.


• Ability to squat, stoop, kneel, push, bend, reach, and pull occasionally.


• Must wear required personal protective equipment (PPE), including safety glasses, gloves, hearing protection, and steel-toe shoes.


• Must maintain mental alertness, focus, and ability to manage multiple priorities in a fast-paced environment.
