Spiegelworld is seeking an experienced Restaurant General Manager to lead Superfrico at The Cosmopolitan of Las Vegas. You will influence all BEAF aspects and own guest satisfaction while driving revenue, costs, and staff development.

About the Role

Spiegelworld is looking for an experienced Restaurant General Manager to lead Superfrico at The Cosmopolitan of Las Vegas.The Restaurant GM will be invited to participate in, influence and contribute to all areas of Spiegelworld’s BEAF (Beverage, Entertainment, Art & Food) experience.

This position will be responsible for curating and cultivating the next level of product and service-driven restaurant professionals, ensuring efficient restaurant operations, meeting and exceeding revenue and quality targets, and developing and executing key marketing, PR, and social media activities and campaigns. The General Manager will own guest satisfaction, participating in local food and beverage (F&B) community and industry events, controlling operating costs, people leadership, and staff development. The ideal candidate will thrive in a creative environment and embrace the challenges of a shared space with unique performers.

This role is responsible for setting the strategic vision for the restaurant and is accountable for the restaurant’s operational and financial success. Overseeing 140+ team members, including 10 direct reports.

What You’ll Do
  • Work closely with Spiegelworld and resort partners to ensure an expertly coordinated restaurant concept.
  • Actively engage in our antiracist commitment and internal practices by participating in offered learnings, engaging in conversations around Equity, Diversity, Inclusion, and Accessibility, and helping us maintain a safe and welcoming workspace.
  • Create a work environment that promotes teamwork, performance feedback, recognition, mutual respect, and employee satisfaction.
  • Create SOPs and Standards of Service for the front of house and back of house activities to ensure all standards are being met and train staff appropriately.
  • Oversee all F&B operations for restaurant and theater, ensuring an integrated experience.
  • Actively participate in service and daily operations.
  • Maximize revenue with effective table management and planning for additional resources during high volume periods.
  • Select, train, evaluate, lead, motivate, and coach all 140+ employees, both union and non-union, to ensure that established cultural and core standards are met.
  • Control labor and operating expenses through effective scheduling, budgeting, purchasing decisions, inventory, and cash control.
  • Actively develop F&B knowledge and instill excitement and passion for food, beverage, and service in the team. Host meetings and conduct regular education sessions for staff on product and service.
  • Take ownership of guest concerns and requests while acting decisively to ensure guest satisfaction when issues occur.
  • Appropriately engage in guest interaction and establish a network of regular guests.
  • Work closely with the Show team to craft unique guest itineraries and seamless customer service between the connected venues.
  • Ensure all resources for an efficient operation are in place, directing routine inventories, and conducting routine inspections of the restaurant.
  • Assist in sales and marketing activities, conducting and evaluating routine sales data, and keeping abreast of F&B trends and new developments in the market.
  • Hold and attend regular operational meetings to ensure effective coordination and cooperation between departments.
  • Ensure strict compliance with SNHD health codes, safety regulations, and resort partner operating policies.
What You Bring
  • Minimum of 10 years of experience in restaurants with at least 4 years in restaurant management. A bachelor’s degree in hospitality or hotel/restaurant management is desirable.
  • Wealth of food and beverage experience in large restaurants and proven experience as a manager.Experience in the Las Vegas or nightlife market is a plus.
  • Well-developed interest in food and beverage, with the ability to remember and recall ingredients and dishes to inform customers and staff.
  • Hands-on experience and working knowledge of restaurant management software, like OpenTable, Resy, SevenRooms, Micros, and InfoGenesis.
  • Proven people management, culture-building motivation, and training development skills to be an inspirational leader to your team. Experience managing union staff is a must.
  • Strong problem-solving skills and ability to work in an always-changing, never dull, creative environment that creates memorable moments.
  • Possesses excellent communication (written and verbal), financial acumen, and business management abilities.
  • The ability to effectively communicate in English, both written and verbal.
  • Must have a flexible schedule with the ability to work nights, weekends, and holidays.
  • Willingness to be dressed in your Spiegelworld costume wardrobe.
  • Must have valid work authorization for the US
