Position may rotate 6x2 or 4x2. Housing and daily meals are provided.

Qualifikationen

• Must have High School diploma or GED.
• Alaska Food Handlers Card or ServSafe certification within 30 days of hire.
• Two years of experience as a Sous Chef in a healthcare or hospital food service operation with supervisory responsibilities.
• Able to follow standardized written recipes.
• Proficient with equipment: steam tables, dish machine, knives, ovens, slicers, mixers, grill, fryer, broiler, flat tops, roasting ovens and kettle.
• Must pass background checks as per applicable laws.
• Fluent in speaking, reading, and writing English.

Aufgaben

• Oversee all culinary production and kitchen operations.
• Menu planning and development.
• Prepare food per par level sheets and standards from Nutrition Services and Health Department.
• Lead daily tasks, complete production sheets, and verify supply needs.
• Ensure quantity, quality control, and sanitation in food production.
• Conduct pre-service meetings, train staff, and input post-production data.
• Supervise and train food service personnel.
• Coordinate staff through daily production needs.
• Oversee cafeteria flow, sanitation, and customer service.
• Enforce FIFO and HACCP food safety standards.
• Support active safety program and ensure uniform standards.
• Fill in for various kitchen positions as needed.
